Drain and rinse your beans and set aside. Pick the leaves of the parsley and cilantro (it&#8217;s OK to have some stems &#8211; don&#8217;t make yourself crazy about it). Wash the scallions and slice into sections so they fit better into the food processor. Peel garlic. Clean mushrooms and remove stems. <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4745.jpg?w=550\" alt=\"\"  data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4745.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript>A little trick to quickly get the stems off is to place the mushroom in your palm and with your other hand, wiggle the stem from side to side and it kind of pops off. <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4744.jpg?w=550\" alt=\"\"  data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4744.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript>It&#8217;s OK if a little bit of mushroom stems are left behind &#8211; you just don&#8217;t want too much or your burgers will taste too earthy. Now, quarter the mushrooms so they process quickly. <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4746.jpg?w=550\" alt=\"\"  data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4746.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript><\/li>\n<li class=\"instruction\">Pull out your food processor. The order in which you put the ingredients into the food processor makes or breaks the texture of these veggie burgers. First, let&#8217;s put scallions and garlic in. <img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4747.jpg?resize=550%2C750\" alt=\"\" width=\"550\" height=\"750\" data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4747.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript>Pulse a few times until it is finely chopped and looks like this. <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4748.jpg?w=550\" alt=\"\"  data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4748.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript>You may need to use a spatula to scrape down the sides and repulse if it&#8217;s not the right chop.<\/li>\n<li class=\"instruction\">Now, put quartered mushrooms, parsley, and cilantro leaves in on top of garlic and scallions. <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4749.jpg?w=550\" alt=\"\"  data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4749.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript>Pulse until mushrooms are chopped like this. <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4750.jpg?w=550\" alt=\"\"  data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4750.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript><\/li>\n<li class=\"instruction\">Next goes the beans, tomatoes, cumin, and kosher salt on top of the mushroom mixture. <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4751.jpg?w=550\" alt=\"\"  data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4751.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript>Pulse a couple of times but keep some texture. <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4752.jpg?w=550\" alt=\"\"  data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4752.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript><\/li>\n<li class=\"instruction\">Last, put the oats in on top of the mixture. <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4753.jpg?w=550\" alt=\"\"  data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4753.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript>Pulse until combined but still has some texture. <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4754.jpg?w=550\" alt=\"\"  data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4754.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript><\/li>\n<li class=\"instruction\">I recommend transferring the veggie burger mixture to a bowl at this point to make scooping easier. (gross looking picture warning) <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4755.jpg?w=550\" alt=\"\"  data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4755.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript><\/li>\n<li class=\"instruction\">Get two baking sheets and line them with parchment paper (these burgers will stick to tinfoil and cook beautifully on parchment without adding any spray or additional fat). Use a \u2153 cup measure to scoop the burger mixture onto the trays. I did five burgers per tray because I couldn&#8217;t fit all ten on one tray and wanted them to cook evenly. <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4760.jpg?w=550\" alt=\"\"  data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4760.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript><\/li>\n<li class=\"instruction\">Use a spatula to flatten and shape the mix into burgers. <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4758.jpg?w=550\" alt=\"\"  data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4758.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript><img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4759.jpg?w=550\" alt=\"\"  data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4759.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript><\/li>\n<li class=\"instruction\">Place the trays into the oven and bake for 20 minutes. At 20 minutes, gently flip the burgers <img data-recalc-dims=\"1\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4765.jpg?w=550\" alt=\"\"  data-lazy-loaded=\"true\" \/><noscript>&amp;amp;amp;lt;img src=&#8221;http:\/\/www.everydaymaven.com\/wp-content\/uploads\/2011\/10\/IMG_4765.jpg&#8221; width=&#8221;550&#8243;\/&amp;amp;amp;gt;<\/noscript>and place back into the oven. Bake for an additional 15 minutes.
