Simple…and quick.
Ingredents:
- 2 cloves garlic (or more) finely chopped
- 1/2 onion diced
- 1 cup cherry or grape tomatoes quartered
- Splash white wine
- veggie or chicken broth – about 1/2 cup
- fresh parsley and basil
- Handful spinach chopped fine
- Lots of parmesan
- One pack of bacon
- Pasta of your choice
Roas bacon to crispy to cruble on top
- saute onion in olive or avocado oil until soft, add garlic
- add tomatoes and saute together for a few minutes until shoftened and juices releaseding
- splash of wine, salt and pepper and hot sauce if you choose togehter until the wind ie wine is mostly evaporated
- add borth, simmer on low for around 5 minutes, then add spiniach and fresh herbs
- Toss with pasta and bit of pasta water i fneeded, add lots of parmesea cheese nad finaly topew ith bacon
Additional ideas.
- Sauted chicken is also great in this, simple saute the chicken till brown and bite sized pieces before addding the onion.
