Simple…and quick.

Ingredents:

  • 2 cloves garlic (or more) finely chopped
  • 1/2 onion diced
  • 1 cup cherry or grape tomatoes quartered
  • Splash white wine
  • veggie or chicken broth – about 1/2 cup
  • fresh parsley and basil
  • Handful spinach chopped fine
  • Lots of parmesan
  • One pack of bacon
  • Pasta of your choice

Roas bacon to crispy to cruble on top

  • saute onion in olive or avocado oil until soft, add garlic
  • add tomatoes and saute together for a few minutes until shoftened and juices releaseding
  • splash of wine, salt and pepper and hot sauce if you choose togehter until the wind ie wine is mostly evaporated
  • add borth, simmer on low for around 5 minutes, then add spiniach and fresh herbs
  • Toss with pasta and bit of pasta water i fneeded, add lots of parmesea cheese nad finaly topew ith bacon

Additional ideas.

  • Sauted chicken is also great in this, simple saute the chicken till brown and bite sized pieces before addding the onion.
