I think I did it. Finally, a great Carne Asada Marinade. I think I can tick off my list purchasing bottled marinades and rubs. We seem to be able to now make our own.
For the Carne Asada Marinade, you need just the following;
- 1 lime, juice of
- 1 lemon, juice of
- 1 orange, juice of or 1⁄2 cup orange juice
- 2 tablespoons chili powder
- 2 tablespoons ground cumin
- 1 1⁄2 teaspoons crushed coriander seeds
- 5 garlic cloves, COARSLEY CHOPPED (OR TO TASTE)
- 1⁄4-1⁄2 cup soy sauce (as I am going Gluten Free, I used Coconut Aminos, soy-free seasoning sauce)
- 2 sliced jalapeno peppers (or to taste)
- 1 medium onion, SLICED THIN
- 4 lbs skirt steaks (or flap meat)
Remember, you can always 1/4 or 1/2 the recipe…depending on how much you wish to make
DIRECTIONS
- Combine all ingredients in a 1-gallon ziploc bag.
- Add meat, seal and massage marinade into meat.
- Marinate in bag for up to 24 hours, turning and massaging frequently.
- Grill.
- Serve whole, sliced, or diced for tacos or burritos (I typically get out my Butcher Knife and large Cutting board…and dice!)
After I diced up the meat, I also included the onion that was marinading with the meat as I added to the top of the meat as it ws on the grill.. I then threw it in a cast iron pan for a few minutes…and charred the meat!
Serve with corn tortillas, guacamole (or sliced avocados – $3.99 each in Bermuda…UGH!), fresh cilantro…chopped onions! DONE….
