quacLiving on an Island that gets slammed my Hurricanes and Tropical Storms, our yard ends up getting covered in not only dead trees, branches and palm frawns….but tons of Avocados.

Avocados in the store here are approx. $3 each, so throwing these babies away….is a NO NO.  We do give away bags when we can, but since we are HUGE guacamole lovers (and since I would each tacos daily) we needed to find a way to save what we could.  When you allow them to sit out in Bermuda, an entire army of ants decide to take over…and make the avocados their home.

So after looking at dozens of recipes and ways to save our avocados for future, I think the following are the best options.

Julie R. Thomson, Food writer, wrote an article back in 2012 on the Huffington Post.  Thank you Julie, for the below ideas, you are a life saver.

So…there are two ways you can freeze avocados.

  • Wash the avocado, skin still on.
  • Cut the fruit in half, and peel.
  • If you are opting to keep them as halves, put them in a Ziploc bag and freeze.
  • If you’re pureeing, either mash the avocados with a fork or in a food processor with a little bit of lime or lemon. Store in a resealable bag and freeze. It’s a good idea to put indentations in the bag to make for easy portion sizes later.

Now there’s a catch — isn’t there always? Something happens to avocado when you freeze it. The texture is just not the same once it thaws. So while you won’t want to be eating slices of these once-frozen fruit, they work great for making guacamole, dressings and spreads. So don’t throw those avocados that the recent Tropical Storm or Hurricane knocked own, just freeze what you can and eat your fill of guac all year long!
