My kids love this.  It is a bit of a project, but very good.  Now…before I give the recipe, you need to know that I have yet to get the breaded chicken down yet…so have been using frozen perdue simply smart lightly breaded chicken chunks.  I also need to incorporate broccoli or another vege…

My original goal was to give some very simple “Lazy” dishes…to share, but this is not set it and walk away (like my Carnitas…)

Ingredients

    • 1 bottle of wine
    • 1 large bag of Perdue frozen Simply Smart Lightly Breaded Chicken Chunks
    • Jasmin Rice
    • Chicken broth
    • 1 1/2 cups water
    • 1 med orange (will use 1 tablespoon orange zest and then the juice from the orage)
    • 1/4 cup lemon juice
    • 1/3 cup rice vinegar
    • 2 1/2 tablespoons soy sauce
    • 1 cup packed brown sugar
    • 1/2 teaspoon minced fresh ginger root
    • 1/2 teaspoon minced garlic
    • bunch of green onions
    • Fresh pineapple (or canned if you don’t live on an island like me)
    • 1/4 teaspoon red pepper flakes
    • Sesame seeds

Directions

  • Open bottle of wine, and pour a glass to drink…while you are cooking 🙂
  • Pre-heat oven for Breaded Chicken (see directions on bag)
  • Get your small pot ready to cook your Jasmine Rice.  Use chicken broth in lieu of water.  (see directions on package).  Turn up heat…as the boil will be ready once you are done with the next few steps
  • Pour 1 1/2 cups water, lemon juice, rice vinegar, and soy sauce into a large saucepan and set over medium-high heat.  Stir in the brown sugar, ginger, garlic, 3 chopped green onions and red pepper flakes.
  • With the same grater you used to grate the ginger, add 1 tablespoon of fresh orange zest; yes…from the orange peel
  • Cut orange in half and squeeze both halves of the orange into the saucepan.
  • Stir all and let simmer
  • Chicken broth should be boiling.  Start your rice
  • Put your chicken in the oven

On the side

  • Chop up more green onion (i.e. 2-4) set aside
  • Chop up Pineapple in small chunks

Now…this is an added step….but don’t worry, just do it…

  • Pour more wine as you should be ready for a 2nd glass
  • Pull out a large bowl.  When the chicken is completed (approx. 15 minutes) put in the empty bowl.
  • Pour the simmering Bermuda Orange Soy concoction over the chicken breast and let the chicken sit for a while
  • In the now empty large saucepan, place your chopped Pineapple chunks in the saucepan to warm up.  I try to get a little (very little) char…on the pineapple
  • If you have large spoon with holes (not sure what it is called…but will allow you to scoop out the chicken while straining the Bermuda Orange Soy concoction) place the now marinated chicken into the saucepan with the pineapple
  • I do this so the chicken is not totally drenched….but now has the flavor of the Bermuda Orange Soy sauce
  • (have you checked your rice?)
  • Cook for a few more minutes

Now….your rice should be ready….  Place some rice into a bowl, spoon your chicken….sprinkle some of the green onion that you earlier chopped and set aside…and sprinkle with sesame seeds.

Pour some wine..and you are ready to enjoy!
